Creamy coconut milk and tart cherries make for the most delicious smoothie and afternoon treat. This smoothie is so simple that I almost can’t call it a recipe, but cherries and coconut are such a great flavor combination so they’re getting their own dedicated post here on What Annie’s Eating. The thick coconut milk gives this smoothie an extra decadent flavor, and the cherries are the perfect tart counterpoint. I prefer to use canned coconut milk for smoothies, as it is very thick and creamy, and has a much more authentic coconut flavor than coconut milk in a carton. I’ve been buying this coconut milk from the Whole Foods 365 brand and would highly recommend it! As a note, this smoothie would make a great popsicle as well if you have popsicle molds!
Cherry + Coconut Smoothie
- 2 Cups frozen pitted cherries
- 1 and 1/2 cups canned coconut milk
- Handful of ice cubes about 4
- Pinch of Salt
- Blend all ingredients until smooth and enjoy!
