I’ve spent my culinary school externship in the test kitchen at goop.com for the past several months and it’s been a dream come true – it involves recipe testing, development, writing, food styling, editorial research, kind of all things under the sun as they relate to food. Not to mention, the food editors are fantastic chefs and the test kitchen itself looks pretty dreamy. This grilled veggie salad with chermoula comes straight out of the goop test kitchen this summer and I can confirm it deserves a spot on your table, whether you’re making a weeknight dinner, lunch, or entertaining friends. This salad is so flavorful on it’s own from the seasonal vegetables and bright and herby chermoula, but if you want to make it more filling you could top it with grilled or baked salmon, chicken, or steak.
