Watermelon + Mint Salad

This salad might be your last chance against a hot summer day…at least if you’re like me and you live in LA and don’t have AC.  This is one of my all-time favorite dishes to make because it’s simple to throw together, it’s so refreshing, AND it will compliment all of your summer grilling projects, I promise.  The most difficult part of this recipe is cubing the watermelon, the rest is just throwing delicious ingredients together.

Ingredients:
1/2 watermelon, cubed
1/2 red onion, finely diced
3/4 cups mint (I just grab a big handful of mint and chop it up, feel free to omit or add mint depending on how assertive you want the flavor to be)
1/2 cup Feta (omit to make this a vegan dish)
Juice of 1 lemon

Directions:
Cut watermelon into cubes.  Toss with freshly chopped mint and diced red onion. Top with feta cheese and the juice of one lemon.
