One of my biggest sources of inspiration when testing out new recipe ideas is the seasons. During the Fall and Winter I just want to be cozied up on my couch with a bowl of homemade roasted vegetable soup, while Spring and Summer send me rushing outdoors for ripe berries and tomatoes at the farmer’s market, beach picnics, and evening dinner parties gathered around a table full of grilled goodness (maybe throw some Rosé in there, too). I have been recipe testing and developing like crazy lately and I have so many delicious Summer recipe ideas that I can’t wait to share with you on my little corner of the web!
First up in the lineup is this Blackberry and Thyme Chia Jam! I have always loved the juicy and tart flavor of a blackberry jam, and I’ve never committed to making a jam at home since it involves the daunting process of canning, tons of sugar, and ingredients I don’t readily have on hand (i.e. pectin). This recipe, however, only uses 5 ingredients, and comes together in 20 minutes or less. Tart Summer blackberries, floral honey, juicy lemon, and herbaceous fresh thyme make for such a delicious and balanced flavor combination in this recipe. Additionally, this jam relies on superfood chia seeds (rich in protein, fiber, and omega-3 fatty acids) as a thickening agent as an added health benefit. I love to enjoy this jam on toast with crunchy almond butter, swirled into greek yogurt or vanilla ice cream, mixed into oatmeal, or on top bruschetta with goat cheese and a drizzle of honey.
2 Cups of Blackberries
2 Tablespoons Freshly Squeezed Lemon Juice
2 Tablespoons of Honey (Maple Syrup or Agave could work as well)
2 Tablespoons of Chia Seeds
1-2 Tablespoons of Chopped Fresh Thyme (Optional – but delicious!)
Add the blackberries to a pan and cook over medium heat for 5-10 minutes, when the fruit becomes juicy and syrupy. Gently mash the fruit with a wooden spoon or a potato masher, leaving the fruit as smooth or thick as you’d like. Take the berries off the heat, and stir in the freshly squeezed lemon juice and honey. Stir in the chia seeds and chopped thyme and gently mix so the ingredients are well incorporated, and let sit for 5 minutes to thicken. If you want a thicker jam, feel free to add more chia seeds – I would recommend added about a teaspoon at a time and letting the jam sit for a few minutes to see how much it thickens the jam.
