Look no further for your new favorite winter side dish! When carrots are roasted like they are here they take on a charred, earthy, and also sweet flavor. I top these roasted carrots with lemon, garlic, goat cheese, and basil to elevate a seemingly basic vegetable dish to something delicious. The best part about this recipe is that it is so simple to whip up! Not to mention healthy and tasty, too.
Carrots (I used 14 organic orange carrots and 10 organic purple carrots).
1 tablespoon Olive oil
1 clove Garlic, diced
1 cup Basil (You could swap out basil for mint, or any herbs you have on hand).
2 tablespoons goat cheese
Preheat oven to 400*. Place carrots on a baking sheet lined with parchment paper or aluminum foil. Drizzle tablespoon of olive oil on carrots and toss them around to evenly coat. Sprinkle diced garlic, 1/2 cup of basil (chopped), a pinch of lemon zest, salt, and freshly ground black pepper onto carrots. Squeeze juice from half of one lemon onto carrots. Roast for 30 minutes or just when the carrots get tender, with spots of golden brown. When done roasting, top the carrots with the rest of your chopped basil, juice from other half of lemon, and crumbled goat cheese. Serve immediately. Bon appetit!
